Power Food: E is for Edamame

Edamame is a very rich and nutritious food.  What?  Never heard of it?  Well it is another name for unripened soybeans.  Why you may ask is a unripened food considered healthy?

Edamame is an excellent source of energy.  It is rich in Vitamin B, Manganese, Iron, Phosphorus, and Vitamin K.  It also contains Zinc, Magnesium, and Vitamin C.  It contains good carbohydrates and omega 3 fatty acids.

Edamame was first discovered in Japan.  It is used mostly in Asian cooking.  It has been identified as a food that has nutritional value and health benefits.  Edamame in some Asian restaurants have been used as dip. 

So a suggestion is put these on top of your salad for an extra nutritional boost.
